Not all particles necessarily decay. Electrons and neutrons, for instance, don't decay. Protons may or may not. What's to stop them from eventually rearranging into, say, a simulation that creates a perfect facade of you or any given reality? It's technically not "you," but from the inside it would seem like it was.
Admittedly, that's kind of dodging the original point, but for the sake of argument I believe it is still valid.

And how do you posit that these particles will rearrange themselves? Especially so, with the decay of the other universal particles?

Probability again. At any given moment, there is a non-zero probability that an electron can be found to be anywhere in space. Of course, some would argue this doesn't count unless someone happens to be looking...
Even if that wasn't the case... sooner or later, something is (with probability one) going to cause it to happen without randomly placed electrons, second law of thermodynamics be damned. Simple cause and effect... as long as the universe as allowed to run, there is always the chance of some event of unknown nature occurring which will cause another event to occur, and so on, leading the any possible sequence of events occurring.

We are a vibrational energy frequency experiancing life as a human when we die our frequency shifts into another reality nothing that is living can die.

But, in this instance, in what way is there a simulation of myself created, without the necessary particles to do so? My body is comprised of more than simply electrons, neutrons, and photons. Those particles alone, cannot recreate my form in any sense. And that is what we are discussing, the decay, and subsequent nonexistence of the other elementary particles. Furthermore, within this simulation, how are these particles recreating permiability within the universe? The sensation of touch, for instance? Again, your entire argument begins to crumble with the absence of a cyclic foundation.

This is basically equivalent to saying that since my computer processor is capable of displaying a cat, it must be made of organic material and not transistors and gateways. The actual particles that make up your body are not needed to simulate your mental capacity. All that is needed is the ability to think it's you, and that ability can be afforded simply by a bunch of 0s and 1s.

You seem to forget that we are discussing a natural occurrence, and not a computer program. And even still, your entire premise is contradictory to your thinking. The programming of a holographic simulation, just as a computer program, is hinged upon the essence of predetermination, which is inherently contradictory to the conceptualization that the universe is probabilistic at its core.

It is correct to state that we are discussing a natural occurrence. What is a computer? It is a certain configuration of matter and energy which is capable of processing information in a specific way. At its core, any given computer is just a certain combination of data itself, except the data constructing it is reality itself. Given the infinite time we are allowing, there is no reason to assume a computer with any given hardware or software cannot be spontaneously generated.

Hold on, I'm going to go wait for this computer to magically manifest itself. Bbl.
